Founded 150 years ago, this specialty shop uses time-honored methods, wild Lake Biwa nigorobuna (round crucian carp), and Omi rice to create our funazushi and tsudani dishes with fish from Lake Biwa.
Ayuya is a business that is continuing to promote “Omi” with specially wrapped products that focus on the beauty of Lake Biwa. Beginning with its well-known konbu-maki (sliced dried herring or other fish wrapped in konbu seaweed and boiled), Ayuya has amassed a strong, nationwide fanbase with its popular homemade taste.
